Ingredients:
1 cup roasted peanuts (skin removed)
1/2 cup melted jaggery (from “The Jaggery Company” cubes or brick)
1 tablespoon water (for melting the jaggery)
1/4 teaspoon cardamom powder (optional)
Instructions:
1. Roast the Peanuts: Heat a pan and dry roast the peanuts on medium flame until golden and aromatic. Let them cool, then remove the skins by rubbing them between your palms.
2. Melt the Jaggery: In a small pan, add jaggery cubes or a piece of jaggery brick with 1 tablespoon of water. Heat on low flame until the jaggery melts into a smooth syrup. Add cardamom powder for extra flavor.
3. Combine: Add the roasted peanuts to the melted jaggery. Mix well until all the peanuts are evenly coated with the syrup.
4. Shape the Laddoos: While the mixture is warm, grease your hands with ghee or oil and shape the mixture into small, bite-sized balls. Work quickly as the jaggery hardens as it cools.
5. Set: Let the laddoos cool completely to firm up. Store them in an airtight container.
Usage:
1. Use “The Jaggery Company” cubes or brick for a richer flavor, or jaggery powder for convenience.
2. Roast the peanuts lightly for a nuttier aroma and better crunch.
3. If the mixture cools and hardens before shaping the laddoos, warm it slightly to soften.
Benefits:
• Energy Booster: Packed with protein from peanuts and natural sugars from jaggery, these laddoos provide sustained energy.
• Iron-Rich: Jaggery is an excellent source of iron, helping to combat anemia.
• Heart-Healthy: Peanuts contain healthy fats and antioxidants that support cardiovascular health.
• Gut-Friendly: Jaggery aids digestion and prevents acidity.
• Kid-Friendly: These laddoos are a healthy snack alternative to sugary treats.
